Thanks for you long story for playing HEVC videos on Mac freely. As for me, all things I know are that how to convert iTunes M4V movies to HEVC without any limitation. And I think there is an adminicular knowledge from what you mentioned. No matter which situation you are, everyone can follow your and my suggestion to deal with iTunes M4V files and HEVC videos.
When it comes to iTunes M4V to HEVC, the first thing you should confirm is whether your iTunes movies and TV shows are encrypted by FairPlay DRM technology, since iTunes M4V files are divided to two types, respectively DRM M4V and unprotected M4V.
As for unprotected M4V files, you will easily convert them to MP4 with some free video converter.
But regarding to DRM M4V, it will be a difficult task for you. You should remove DRM protection from iTunes digital files firstly and then convert iTunes DRM-free M4V files to HEVC.
